I got this in Shanghai, and it’s already my absolute favourite knife in the kitchen. 🔪 ❤️ It’s the chop cleaver (stay away from the bones with this one!) from Zhang Xiaoquan’s premium Song-series Damascus set. Not only is it beautiful, but it was razor-sharp out of the box—it passed the paper test—and feels outstanding in the hand. Also refreshing to find a great Chinese knife instead of the usual hyped Japanese kitchen knives. Zhang Xiaoquan is one of China’s oldest knife and scissor makers (founded in 1628) and is especially famous for its scissors. This is a true workhorse that will live alongside my Masamotos and Sabatiers. #chefknife
